Why I Love Cottage Cheese

I’ve talked a lot about Greek yogurt being one of my favorite ways to add creaminess and protein to recipes. Cottage cheese is another fave way! What actually is it?

Cottage cheese is similar to soft cheeses like ricotta and mozzarella. Essentially, it’s cheese curds that are created during the coagulation process when an acid (like vinegar) or live probiotics are added to pasteurized milk. Once the whey (liquid) is separated, the block of protein that is left is sliced into curds and mixed with cream. And that’s the cottage cheese we know and love!
